Celeriac is an all rounder! For soup, salads and as an addition to many dishes. The charming and fresh celeriac with its sparkling leafs does not only have a special taste, but moreover it contains a high level of etheric oils, vitamins (B1, B2, B12, C and E) and mineral substances which contribute considerably to our health.
The typical taste of celeriac is not random, but it is a result of a sophisticated mixture of active ingredients. One of the applications that is often supported by research results is the reduction of blood pressure. The etheric celeriac oil contains a substance called buthylphtalide, which gives the celeriac its typical taste and reduces the systolic blood pressure. Two bars of celeriac every day will already give results. Moreover the high potassium content - which is the natural opponent of sodium - encourages the positive effect on blood pressure. Another etheric oil, limonum, which can also be found in a lemon shell, increases the activity of the depoisoning system in our body. The celeriac produces this terpene in order to fight bacteria, moulds and natural enemies during its growth. These terpenes also stay present in our mucous membrane (mouth, pharynx and stomach) where they have an anti-bacterial and mould-eliminating effect. So there is no doubt that celeriac is a very healthy vegetable, which can contribute substantially to our quality of life!
